Thin Mints ingredients:
1/4c. Coconut Flour
1/2c. Garbanzo Bean Flour
1/2c. Brown Rice Flour
1/2c. Arrowroot Powder
1/2c. Cocoa Powder
1 tsp. baking soda
1 tsp. Sea Salt
3/4c. Coconut Oil liquid (melted)
2 Flax Eggs (2TBLS. Ground flax seed to 6 TBLS water let sit 10 min)
3 tsp. Vanilla Extract
2 TBLS. Mint Extract
3 C. Chocolate Chips

Best Spots in Austin TX
I always have so much fun when I visit Austin TX for SXSW every year, so I wanted to share a couple of my favorite spots to eat at gluten free style. All of these restaurants have lots of yummy vegan and gluten free options. Even in Texas I want to be able to eat healthy so remember you can eat great even when you are on the road!
Koriente likes to keep it fresh., they have excellent Bibimbap that you can customize in all sorts of ways with different toppings. This great Downtown Spot makes it easy to keep it healthy. Make sure to ask for the gluten free menu and the wheat free soy sauce, they are totally down with helping make your dishes gluten free and even soy free if that's your thing.

Bouldin Creek Cafe

This all vegetarian cafe is especially great for breakfast, brunch or lunch. They even have a separate gluten free menu to help you decide on best eats. They like to keep it funky at Bouldin Creek Cafe in style and atmosphere! The Veggie Scramble is so good with Fresh Peppered Tomatoes and the Grapefruit on the side is not to be missed, with garlic tahini dressing!

I absolutely love G'Raj Mahal, I end up eating here more than any other restaurant when I'm in Austin. But be warned it is spicier than typical Indian Food, so if you normally do medium you want mild here and so forth. You MUST order the Sanna when you go here, which is Gluten-Free steamed cake made with coconut and rice it is the most deliciousness thing ever! Everything is exceptional here from Vindaloos to Aloo Gobi.
They have a new location just 1 block away from old location, here the new address so don't get confused!

Aster's Ethiopian Restaurant
Ethiopian feast! Yes they have gluten free injera (the Ethiopian bread) you just have to ask! I love this spot it's super cheap as Ethiopian food typically is, and has all of the classic veggie dishes. It's cute and quiet and great for larger groups of people.

Casa de Luz
A trip to Austin would not be complete without a meal at Casa de Luz, tucked into a dead end road. This macrobiotic spot is legit! It's sorta buffet style, you pay a set price and it includes drinks, soup, and entree, super healthy and super awesome. It's set back from the street with open seating inside and some spots outside, it's a great spot to chill and fuel up!
