Dairy Free Vegan Gluten Free Recipe
Thin Mints are chocolaty goodness that you just can't resist, and a refreshing cookie to make this time of year. Make up a batch of these whenever you have the craving. Perfect for holidays or dinner parties. They also keep in the freezer so you can pull them out whenever you like. I made this Holiday Version with fun Christmas Cookie Cutters, making this a very festive treat.
1/4c. Coconut Flour
1/2c. Garbanzo Bean Flour
1/2c. Brown Rice Flour
1/2c. Arrowroot Powder
1/2c. Cocoa Powder
1 tsp. baking soda
1 tsp. Sea Salt
3/4c. Coconut Oil liquid (melted)
2 Flax Eggs (2TBLS. Ground flax seed to 6 TBLS water let sit 10 min)
3 tsp. Vanilla Extract
2 TBLS. Peppermint Extract or Peppermint Flavor
3 C. Chocolate Chips

Gluten Free Thanksgiving Menu and Recipes (Vegan Too!)
This year I wanted to share a Thanksgiving Menu with you. Most of these recipes are a unique take on the some of the classics, but also adding in some of my favorites like Wild Rice Dumplings-which I say are probably a version of what was maybe "truly" eaten on the very first Thanksgiving. Every recipe is really healthy but don't worry they are a couple desserts in there too! I literally make this whole menu, but feel free to make a couple recipes that stick out to you. I am a vegetarian so you won't find meat here...but I'm pretty sure that isn't the recipe you are looking for anyway!

Harvest Bread-This is a very hearty bread and it is one of my best gluten free recipes! This bread is packed with nutrition from the seeds and nuts that serve as the base for this bread.
Cranberry Pecan Green Beans Combining all the perfect Thanksgiving flavors in one dish- pecans, cranberries, and green beans! This recipe is also ridiculously simple and one of my favorite sides.
Creamy Carrot and Coriander Soup the flavors of coriander and carrot blend together perfectly in your mouth. It can be a meal all on its own, but it is very complimentary to any dish.
Wild Rice Dumplings These little guys are so delicious! Made with wild rice, shiitake mushrooms, peppers with a sesame oil dipping sauce
Pumpkin Pie Parfait: Layers of Candied Nuts, Maple Flakes, Pumpkin Filling, and Coconut cream you have never tasted anything so good!
Apple Crisp: warm layers of apples will just melt in your mouth upon the first bit. The delicate crunchiness of the topping fits perfectly with the sweet apples.

Pumpkin Pie Parfait
Oh my Goodness Guys, even I don't like to make pie crusts! OK, now I said it, that is why I made this Pumpkin Pie Parfait because it has everything you would want in a good Pumpkin Pie without the hassle of those god-awful gluten free pie crust recipes. But have no fear this one is simple and fun!
This Pumpkin Pie Parfait has layers of Candied Nuts, Maple Flakes, Pumpkin Filling, and Coconut cream you have never tasted anything so good!
Pumpkin Pie Parfait Ingredients:
1 can Organic Pumpkin
2 Flax Eggs (How To Make Flax Egg: Take 2TBLS. Ground Flax mix with 6 TBLS. Water and let sit for 5 min)
1/2 tsp. Ground Cinnamon
1/8 tsp Ground Ginger
1/8 tsp Ground Cloves
½ tsp Sea Salt
1/4c. plus 3 TBLS. Coconut Sugar
3/4c. Unsweetened Almond Milk
2 TBLS. Arrowroot Powder
2 - 14oz. Cans of Coconut Cream Chill Overnight **see below for where to get**
Toppings #2 (Maple Roasted Flakes n Nuts)
2 Pinches of sea salt
1 1/2c. Pecans Chopped
1/2c. Quinoa Flakes*
1/3 cup Maple Syrup
Make sure you chill the coconut cream in it's can in the fridge overnight so it gets solid
Topping Maple Roasted Flakes n Nuts:
1) Preheat Oven to 350 degrees
2) In a bowl stir together all the Maple Flake Ingredients from Toppings #2, just till mixed
2)Line a baking sheet with parchment paper
3)Spread Mixture evenly onto the baking sheet
4)Bake for 15-20 min, you want the mixture to be slightly browning, it will brown more out of the oven
5) Let cool completely before layering in Parfait

** Currently I buy my Coconut Cream at Trader Joe's, but finally other health food brands are making it in smaller cans, so you can buy it there too, NOT to be confused with coconut milk! If you can not find it canned, then buy Coconut Milk (you will need 4 cans to make 2 cans coconut cream) place in fridge over night. Open BOTTOM with a can opener and like coconut water drain out, then just remove the cream and whisk to make it a whipped consistency.
