Avocado’s stuffed with Vegan Strawberry Salsa Recipe
Strawberry Salsa is truly delicious as you will see when you give this recipe a try. Its best to get your strawberries from the farmers market is you want the best tasting strawberries, sadly a lot of the strawberries you can buy in the store look beautiful but they really don’t taste that great. You want the sweetness to be bursting out of these babies. Don’t ever cheat yourself out of using fresh ingredients especially when it comes to lime juice!

It seems like BBQ’s are meant to taunt the vegetarians and gluten free people of the world, there literally is NEVER anything I can eat, if I don’t bring it. Sometimes I think “I’m just stopping by” and the next thing I know I have been there for hours and I am starving, I no longer go to BBQ’s unprepared and you shouldn’t either!!
!2-14 Small Ripe Strawberries Chopped
½ Jalapeno without the seeds*
10 Springs of Chives chopped finely
¼ c. Fresh Mint Loosely Packed- then chopped
½ Fresh Lime Juiced
1 Small Clove of Garlic Chopped
Sea salt to taste
2 Ripe Avocados Halved
1. In a bowl mix Strawberries, Jalapeno, Chives, Mint, Lime Juice, Garlic and a few sprinkles of sea salt to start. Adjust salt to your liking
2. Half the Avocados, remove pit
3. Fill Avocado's, with Strawberry Salsa and EAT!!
