Carrot Hummus is pretty awesome, I mean really AWESOME. I brought this to Thanksgiving this year and it was a total hit. I love bringing dinner platters full of a variety of things, cause everyone likes muchin'. Plus I am hungry all the time. This recipe is really simple, I always use beans that I make at home in my rice cooker, to avoid using cans.
4-5 Large Carrots chopped
1 1/2c. Veggie Broth
1/2 c. Water
3 Cloves Garlic chopped
1c. Cooked Garbanzo Beans
1/2 Lemon Juiced
1 TBLS. Tahini
1 TBLS. Olive Oil
Salt n Pepper to Taste
1)Cook Carrots and Garlic in Veggie Broth & Water, till carrots are soft
2)Pour them into your food processor, plus 1 c. of cooking liquid and all other ingredients and process till smooth
3) Chill In Fridge for 1 hour, then EAT!
