I love to make thumbprint cookies! These jam-filled cookies are vegan, gluten free, and only 8 ingredients. You are going to love how easy these are to make! Feel free to use whatever jam you like. I enjoy bringing these over to friends or to dinner parties, plus there is no refined sugar in them, double bonus!
1 ½. Bob Red Mill All Purpose Flour (or your favorite GF Flour mix)
1/2c. Coconut Flour
½ tsp Baking Soda
½ tsp Sea Salt
1/2c. Honey (or Agave)
2 TBLS. Vanilla Extract
2 Flax Eggs (2 TBLS. ground flax plus 6 TBLS water, let sit 5 min)
1c. Coconut Oil Distilled Melted
Organic Strawberry Jam (about a half jar) get the kind only sweetened with fruit
1)Food Process All Ingredients Above (Except Strawberry Jam)
2)Chill Dough For 30 Minutes In Fridge, Not Longer Or Dough Will Become Too Hard
3)Preheat Oven To 350 Degrees
4)Line A Cookie Sheet With Parchment Paper
5)Form Dough Into Quarter Size Balls
6)Press Your Thumb Into Cookie To Make A Hole, Don’t Press Too Far, You Want To Have Divot But You Need There To Be Cookie To Hold The Jam.
7)Put About A 1 Tsp Of Jam Into Each Hole.
8)Bake For 7 Min
Makes Approx. 40 cookies
