Pineapple Chutney! Yes it is sooooo freakin delicious and perfect to eat with some papadum. Sometimes making chutney can be complicated I made this simple recipe to make one of my favorite chutneys. The sweet of the Pineapple blends together well with the savory spices. Compliment this dish with some other Indian Dishes (see recipe ideas below). This is a dish that I really love to make around the Holidays when I tend to be cooking up Indian food up a storm, it brings a little summer into the long winter days. Also makes a great appetizer for a dinner party that friends can easily snack on.
Papadum is a large Indian Cracker usually made from lentil or chickpea flour and therefore naturally gluten free. I suggest buying papadum at a Indian Grocery, or ordering online. Your papadum will come flat but they still need to be heated and roasted to be eaten. The best way to do this is over a flame on your stove. Take your papadum and place over low heat on your burner, wait for bubbles, then with thongs flip to other side. You may want to move the papadum around a little with the thongs to get all the edges. Then they are ready to eat!
Spice Mix #1
1/4 tsp. Mustard Seed
1/4 tsp. Fenugreek Seed
1/4 tsp. Ground Cumin
1/4 tsp. Fennel Seed
1/4 tsp. Red Pepper Flakes
1 Whole Ripe Pineapple Chopped
2 TBLS. Sugar (I use Sucanat but you can use any sugar you want)
1/8 tsp. Sea Salt
1 tsp. Fresh Grated Ginger Root
2 ½ TBLS. Fresh Lemon Juice
1/4 tsp. Fennel Seeds
1/8 tsp. Ground Cumin
1/8 tsp. Ground Coriander
6 Whole Peppercorns
1/8 tsp. Pepper
1/8 tsp Cinnamon
4 Shakes of Ground Cloves
- Turn burner to Medium heat and Put a small amount of olive oil in a large skillet. Heat for 2 min, add all of Spice Mix #1 and heat for 3 -4 min, till you smell the spices getting fragrant in the pan.
- Next add Pineapple, Water, Sea Salt, Sugar, Ginger and Lemon Juice to the pot. Reduce heat to a simmer. Half over the pan and stir occasionally. Allow the pineapple to break down get very soft and the water to get syrupy, this can take up to 90 minutes.
- Once your chutney is done place in jar
- In a clean and hot pan place Spice Mix #2, let spices cook for just 2-4 min, then add to jar of chutney
