Vegan Fruit Parfaits

Fruit Parfaits are the perfect summer treat. One might even say delightful. I use my homemade granola for this recipe, cause homemade granola is always the best! Layer whatever fruit you like, I love getting whatever looks the tastiest at the farmers market. I even make these on the beach! When you whip coconut cream it ends up like whipped cream but more delicious and healthy.
I only use Trader Joes Coconut Cream because it is the only brand that sells it as only cream. You only want cream for this recipe, so coconut milk doesn’t work.
2 cups Homemade Granola (Recipe Here)
1 can Trader Joes Coconut Cream
1 tsp Sucanat or Coconut Sugar
2-3 cups Chopped Fresh Fruit: berries, peaches, apricots, bananas, whatever you like
1) Make coconut cream: empty can of coconut cream into mixing bowl and add your sucanat. Whip for about 3 min just till it becomes fluffy. Store in fridge in sealed container till you are ready to use.
2) Make Parfait: layer granola, coconut cream and fruit, alternating to make 2 layers of everything
4) Makes about 6 parfaits
